Partridge in a Pear-tini




For the vodka

  • 750 ml vodka
  • 1 can (14 ounces) sliced pears in syrup

For Peartini

  • 2 ounces (60 ml) pear infused vodka (above)
  • 1 ounces (30 ml) lime juice
  • 1 ounce (30 ml) white grape juice*

*If you’d like your Peartini to blush, substitute pomegranate juice for the white grape juice.



For the vodka

  1. Fill and preheat the SousVide Supreme to 143F/61.5C.
  2. Put all ingredients into a zipper cooking pouch and use the displacement method (Archimedes’ Principle) to remove the air and zip the seal closed.
  3. Submerge the pouch in the water bath and cook for 2 hours.
  4. Remove the pouch and quick chill in an ice water bath for 30 minutes.
  5. Strain the infusion into a clean bottle with tightly fitting lid or cork.

For the Peartini

  1. Combine Peartini ingredients in a martini shaker with ice and shake vigorously.
  2. Strain contents into a martini glass. Enjoy.
